Aiyama, the Diamond of Sake Rice is a rare strain that originated from the crossbreeding of the highest quality sake rice Yamada-Nishiki from the Hyogo Prefecture. With limited supply it is highly sought after. Daiginjo reveals its quality at 35% polished ratio enhancing the richness and overall flavours.
